Oatmeal Raisin Cookies



Although I think people prefer that I make these cookies and hand them out, I have been asked for the recipe more than a few times.  A couple things make this different from other recipes:  the absence of butter (use olive oil instead) and the pie type spices.  I do not add salt, the baking soda seems to work just fine without it.  I usually make a double batch, partly because we give them away, but also because they make a healthy snack when we are busy on a journey. 

Oatmeal Raisin Cookies

1 Cup Brown Sugar
¾ Cup Extra Virgin Olive Oil
¼ Cup Water
2 Tablespoons Honey
1 Egg
1 Teaspoon Vanilla
1+ Teaspoon Cinnamon
½ Teaspoon Ground Clove
½ Teaspoon Ground Allspice
¼ Teaspoon Ground Nutmeg
¾ Cup Sunmaid Raisins
3 Cups Old Fashioned Oatmeal
1 Cup Flour
½ Teaspoon Baking Soda

Preheat oven to 350 F.  Mix together Sugar, Honey, Oil, Water, Egg, Vanilla and spices.  Once fully mixed, add the raisins and remaining dry ingredients.  Stir until well mixed.  Drop by tablespoon full on baking sheet, preferably parchment paper, bake 12 minutes.  Enjoy!
